According to the weather experts we are heading into a cold snap, so what better food to keep you warm and cosy than a lovely bowl of soup. This is probably the quickest and simplest soup I know and with the added benefit of only 170 calories. It also counts as one of your 5-a-day. What’s not to love!

Peas are a good source of vitamin B1 (thiamin), a powerful mood influencer. Too little leads to irritability and depression. If you drink, tuck into peas regularly, as alcohol rapidly depletes vitamin B1 levels.
Quick pea and mint soup – serves 1, 170 calories
1 ¼ cups of stock made with ½ tsp vegetable bouillon
Pinch of salt and pepper
1 tsp mint sauce or handful of fresh mint (10g), chopped
Place the peas in a pan with the stock and cook for 5-10 minutes. Use a hand blender to make into a smooth and velvety texture. Add the mint, taste and adjust the seasoning with salt and pepper.
Serve in warmed bowls
