As it Valentines day tomorrow why not celebrate with a healthy home cooked meal for you and your partner
This ‘red’ inspired meal is jam packed with vitamins, lean protein, antioxidants and foods that claim to have an aphrodisiac effect like salmon, garlic, chilli, asparagus, vanilla and chocolate
So cook, eat and enjoy!
Sweet Potato & Red Pepper Soup – serves 2
| Ingredients2 tbls olive oil250g sweet potato
1 red pepper, roughly chopped 1 clove garlic |
1 red onion chopped1 tsp cumin
250g vegetable stock Salt and and cracked black pepper, pinch

Peel and slice the sweet potatoes into discs about a half centimetre thick.
Put the sweet potoatoes, onions, red pepper, garlic and cumin into an oven proof bowl and pour over the olive oil.
Roast in the oven at 200C for about 45 minutes until all the ingredients are soft.
Put the cooked vegetables into a blender and add the hot vegetable stock. Blend to a liquid and serve. Add more vegetable stock if you require a thinner consistency.
Salmon with tomatoes and linguine – serves 2
Rub 1 tbl oil onto the salmon fillets and grill or fry for 8-10 minutes (turning once)
Heat the remaining oil and gently fry one tablespoon of the parsley, the garlic, chilli and the ginger for a few minutes until slightly soft. Add the tomatoes and continue to cook for another few minutes. Stir in the flaked salmon and salt.
Meanwhile, cook the pasta for 8-10 minutes or until al dente, and drain. Toss with the sauce and serve sprinkled with the remaining parsley and freshly ground pepper to taste. Serve with a potion of girdled asparagus (which takes about 10 minutes to griddle)
Strawberry Pavlova – Serves 2
| Ingredients2 good quality ready made meringue nests125ml/4.5fl oz low fat Crème fraîche
few drops of vanilla extract

2 tbls sifted icing sugar225g/8 oz strawberries, washed, hulled and cut in half125/4 oz blueberries or raspberries
3 squares of 70% dark chocolate – grated |
Mix the vanilla extract and 1 tbl of icing sugar into the creme fraiche and spoon into the base of the meringues
Mix 100gs of strawberries with half the blueberries/raspberries and 1 tbsp icing sugar. Place in a food processor, blitz until smooth.
Put the remaining fruit on the crème fraiche and finally pour the sauce over the whole lot. Add the grated dark chocolate
